Cuvée Saint-Martin is a blend of the best plots of Domaine Laroche in Chablis appellation. All plots are located on Kimmeridgian soil. Thanks to their numerous nuances, they bring richness and complexity to the final wine.

Tasting

Pale gold colour.

Intense nose with hints of ripe white fruit and spring blossom.

Ripe fruit flavours balanced by zesty acidity. Lingering fruity finish.

Winemaking

Whole bunches are collected in a pneumatic press, then 12 hours settling at 12 to 15°C in specially designed wide tanks. 14 days of fermentation at 17°C in stainless steel.

Vintage report

A year like 2013 requires much attention. From spring onwards, weather conditions were particularly demanding, implying careful intervention in bud removal, cane positioning and leak plucking, in order to aerate the canopy and limit the development of diseases. Flowering took place under mitigated weather conditions and couture (poor fruit setting) was significant, implying a reduction of bunches. The human factor was crucial, up to the harvest period. Picking took place in a very short time frame, when the grapes were both ripe and healthy. Hand harvest and sorting were crucial for quality. Finally, 2013 was a very demanding one, but the profile of each terroir is quite clear and the wines have harmony and the typical salty finish of Chablis.

Ageing

8 months on fine lees in stainless steel. Minimum filtration to preserve the maximum natural character of the wine.

Food pairing

Enjoy it with fish carpaccio, safran-flavoured scallops or pork filet mignon.
