VINIFICATION:
Once the stems totally removed, the entire berries macerate under controlled temperature during a period lasting from 12 to 80 hours, depending on the vintages.
Following up of the bleeding off (saignée).
Using variable soaking times allows to obtain the aromatic structure and colour that we aim at for our cuvee of Boërl & Kroff Rosé.
TASTING:
Soft and persistent foam due to a slow and low-temperature bottle fermentation.
Beautiful color, soft pink rose petals. Enticing aromatic profile with pure raspberry and strawberry backed up by a dense mineral note. Vibrant and charming on the palate with a great structure and bubbles softer than soft. Great purity of fruit and very harmonious.
