This TRENTODOC exhibits a rare elegance, fruit of judicious blend of hand-picked Chardonnay and Pinot Noir that rests sur lie for a minimum of 24 months, which yields an uncompromising, natural wine that is the fullest expression of an extraordinary growing area and of the people that have always understood its character and potential. A sparkling straw yellow in appearance, it offers a soft, full mousse and a long-lingering bead of the tiniest of bubbles. The bouquet is appealingly refined, redolent of subtle apple and crusted bread. Its zero-dosage style succeeds in highlighting its delicate scents of fruit, while an incisive, dry palate presents fragrant pear and a lovely acidity. It is wonderful with prosciutto, Parmigiano Reggiano, seafood antipasti, shellfish, sushi and sashimi, but also as a wine to be enjoyed all through a summertime meal.
