VINIFICATION :
The juice comes exclusively from the first press. The base rape has flowed naturally thanks to gravity, with no pumping. We specially value this technique for the elaboration of our Champagnes. It allows to use very low quantities of sulphites (three times under standard vinification).
This very « natural » vinification, and the rare quality oak casks we use for part of the wines gives to our pinots a very beautiful cooper-coloured aspect, close to 20th century's tradition.
TASTING :
Soft and persistent foam due to a slow and low-temperature bottle fermentation.
Beautiful liquid gold in the glass with the softest bubbles possible.
Cloves, raspberries, almonds, great freshness of aromas. Densely structured yet very fresh. Complex on the palate with pomegranate and an almost sweet malted touch in the after-taste.
An unforgettable example of how great Champagne can be.
