This Gran Cuvée results from an extremely strict selection of grapes from vineyard plots that are, on average, over 20 years old. It is a Franciacorta made using the very ancient production method, which calls for the fermentation of a significant portion of the must in small oak barrels. The Pas Operé represents the “classicism” and the masculine side of Bellavista style; it comes from grapes selected in high hillside vineyards with easterly or south-easterly exposures, whose wines are characterized by more pronounced depth, structure and backbone. It matures for 6 years in our cellars prior to release. The grapes used are approximately 62% Chardonnay and 38% Pinot Nero.
It has a lively, intense and pale mousse and a particularly fine, continuous and persistent perlage. Straw yellow in colour, tending towards brilliant gold, the bouquet is intense and ample yet extremely elegant, well-knit and persistent, with nuances of honey, apples, camomile and hints of vanilla, aniseed and Mediterranean herbs.
Full-flavoured, with considerable structure but at the same time notable elegance, it is very persistent on the palate, with attractive notes of vanilla and ripe fruit; displays firm backbone, rich fruit and excellent breed.
